D.O Cabrales is certainly the most well-known Spanish blue cheese. Is produced only in the village of the same name and three villages of the Peņamellera Alta township, located on the northern spur of the Europa Peaks in eastern Asturias.
For it's own taste Cabrales can be excelent with a full bodied red wine, also as a dessert served with a sherry or even mixed with a creamy cheese as a dip with your favorite crackers.
