Produced according to traditional techniques, these olives are selected by hand and then naturally cured with water, salt, and herbs to produce a pleasantly meaty olive with a soft texture. Aragonesa "Trencada" or Broken olives, also cured 3-4 months, are cracked before they are cured to help tenderize them and bring out their full olive flavor.
