After studying and working with prestigious Chilean wines for years, the two women founders of Mission Chile, agricultural engineers Verónica Larrain and M. Inés Irarrázaval, turned their attention to vinegar. Questioning why a country with world-class wines had no high quality vinegars, they set out to product exquisite natural vinegars with unique flavors that reflect and promote Chilean food culture.
The Origen name was chosen to reflect the return to traditional vinegar making in Chile and a respect for the environment and human health throughout the vinegar making process.
Each wine used as a base for Origen vinegars is hand-selected. The chardonnay wines are chosen from the Casablanca Valley with its Pacific sea air and cold foggy mornings producing renowned white wine. The cabernet sauvignon wines are selected from the Colchagua valley and have ripe red and black berries aromas and soft round tannins characteristic of this region.
In Chile, Mission Chile has become pioneers in their field and has been recognized nationally and internationally for their unique flavors and the attention to detail necessary to produce products of extraordinary quality.
Making exquisite vinegar begins with extraordinary wine – Colchagua Valley cabernet sauvignon and Casablanca Valley chardonnay go through a hand-crafted process of acetification known as the Orleans Method, where a Mother Culture is added to each wine to jump-start the transformation into vinegar.
